Ingredients:
- 1 pack of La Bonanza Avocado Hummus
- 4 whole wheat tortillas or wraps
- 1 cup fresh spinach or mixed greens
- 1 medium cucumber, thinly sliced
- 1 medium tomato, diced
- 1/2 red bell pepper, thinly sliced
- 1/4 cup shredded carrots
- 1/4 red onion, thinly sliced
- Fresh lemon juice
- Salt and pepper to taste
- Fresh cilantro for garnish (optional)
Preparation:
1. Prepare the Vegetables:
Wash and slice the cucumber, tomato, red bell pepper, red onion, and shred the carrots. Set the vegetables aside.
2. Prepare the Wraps:
Lay the whole wheat tortillas or wraps on a clean surface. Spread a generous layer of La Bonanza Avocado Hummus on each tortilla, leaving about an inch around the edges.
3. Add the Veggies:
Layer the fresh spinach or mixed greens on top of the avocado hummus.
Add the thinly sliced cucumber, diced tomato, red bell pepper, shredded carrots, and red onion evenly across the wrap.
4. Season and Garnish:
Drizzle a little fresh lemon juice over the veggies and season with a pinch of salt and pepper to taste.
Optionally, sprinkle fresh cilantro on top for a burst of color and flavor.
5. Wrap and Serve:
Fold in the sides of the tortilla and roll it tightly into a wrap.
Slice the wrap into halves or thirds, and serve immediately for a fresh, healthy meal.
